Although travelling is meanwhile possible again, today the cuisine of La Marina offers a recipe for home. A restaurant with national and international cuisine belongs to the gastronomy of the La Marina Camping & Resort. From there you have a spectacular view across the pool area with water falls, slides and spa. The campsite at the Costa Blanca is open all year and offers lots of sports and entertainment.
RICE WITH CRAYFISH (for 4 people)
• 400 g SHORT-GRAIN RICE
• 12 CLAMS (ALMEJAS)
• 200 g PEELED PRAWNS (GAMBAS)
• 2 CRAYFISH
• 4 TBS PASTE MADE FROM SMALL, DRIED ROUND PEPPERS (ÑORAS)
• OLIVE OIL
• 800 ml FISH STOCK
Brown the prawns in olive oil for a few minutes, add the rice and the round pepper paste and continue to fry while stirring for some more minutes. As soon as everything is roasted, add the fish stock and let everything cook over high heat. In the meantime cut the crayfish in half (lengthwise) and add to the paella, then add the clam, which you have cleaned beforehand. Season with salt and leave to cook until the stock has vaporised.
Set aside for at least three minutes before serving.
PASTE MADE FROM SMALL ROUND PEPPERS:
Wash two small, dried round peppers and remove the core.
Heat a little olive oil in a frying pan.
Fry the pepper until it is golden brown, remove from the frying pan and set aside.
Brown half a regular red bell pepper and half an onion in the same oil.
Place the round pepper, the bell pepper and the onion halves in a bowl, add a raw, peeled garlic clove, some stalks of parsley, 1 TBS of food colouring and 100 g of tomato purée, and mince well.
Bring 1 kg monkfish heads, fish cuttings (tails) or 1 kg moralla (small rock fish) to a boil with 2 litres of water.
Cook for 2-3 hours. Then pour the resulting fish stock through a sieve.
Paella pan or a regular frying pan with a diameter of 30 cm
Skimmer or spoon with a long handle (flat scoop)
Large knife (for cutting the crayfish)
